Chef Lauren blends her passion for healthy and fresh food with an artistic and creative flair.

Founded in 2005 by Chef Lauren Collura, Bacco’s mission is to share her passion for delicious—and healthy—food with her friends, family and clients. Chef Lauren has had a passion for food from the time she was a little girl—growing up in a house full of Italian cooks, (most of them with their own “personal gardens”)—helping to sample recipes, choosing fresh herbs, spices, and the finest of ingredients with her family. Her passion for food and Italian culture blossomed in her adulthood.Spending her junior year of college abroad in Florence, Italy changed Lauren’s life. After earning her bachelor’s degree in English and foreign languages from Rutgers University she moved to Rome, Italy. She worked as a convention director at the United States Embassy consulting on events, menus, sourcing, and everything in between with local restaurants and American cultural attachés.

It was then that Lauren realized her true calling was cooking; she returned to the United States and attended the French Culinary Institute in New York City, where she earned her Diploma in Culinary Arts.

Among many other accomplishments, Lauren was the executive chef at Giorgio Armani’s restaurant Armani Café, corporate executive chef for Avon Global Headquarters, and executive chef at Grotto, all in New York City, where she earned a “Tony 100” from Time Out NY Eating and Drinking Guide for Top 100 restaurants in NYC.

Lauren currently lives in Bergen County, NJ with her husband, Bob. He is the Master Gardener of Bacco’s private garden.
